2 tblspsugar / 2 tsp sugar
1 cup matchstick cut cucumber / cup cucumber cut into strips
1 cup matchstick carrots / cup chopped carrot strips
2 cups hot sticky rice / 2 cups of sticky rice
lettuce leaves / vixens lettuce
Steps:
Sauce:
Heat a small pan over medium heat.
Add oil, swirl.
Shallot saute for 2 minutes.
Add 1/3 cup of water, peanut butter, hoisin sauce and fresh lime juice.

Heat large nonstick skillet and over medium heat.
Add seasame oil.

Stir in cucumbers, carrots and remaining green onions.

Spoon 1/4 cup rice into each lettuce leaf. Top witf tofu filling and add sauce on the top
Step by step:
Sauce:
In pan, heat a teaspoon of oil, fry the shallots add water, hoisin sauce and peanut butter, at the very end add the lime juice. Bring to a boil and set aside.
Filling:
In a skillet add the warmed sesame oil, green onion and fry for about a minute. Then throw in the tofu for another 4 just a moment.
